This delicious gluten free peach cobbler combines the sweet smoothness of peaches with the heartwarming dough base. Serve hot with your choice of whipped or runny cream, vanilla ice-cream or yoghurt. This gluten free recipe means you don’t have to miss out on a favourite dessert.

Great way to use up: fresh peaches that may be a little bruised or dinged up.

Egg free: for those allergic to egg or due to a lack of supply this recipe does not require eggs.

Make ahead: have pre-prepared base and topping ready to pop in the oven while eating your main meal. It will be ready to serve hot when it’s time for dessert.

Left overs: are unlikely!! But should you have some – keep them in the fridge overnight and reheat for breakfast the next day – oh it’s so good!

Ingredients needed for making this gluten free peach cobbler

Fresh peaches – about 8-10 peeled and diced, perfect recipe for seconds or slightly damaged fruit. Canned peaches also suitable just skip steps 1 & 2 below.

Sugar – 1 Cup total (3/4 + 1/4)- I like coconut sugar or maple syrup but regular white or brown sugar is also fine.

Gluten free Flour – 1 Cup – all purpose GF baking flour

Salt – 1 teaspoon

Baking Powder – 1 teaspoon – GF baking powder

Milk – 3/4 Cup of whole milk

Butter – 50 grams (approx. 3-4 tablespoons)

Cinnamon – 1/2 teaspoon (optional)

Medium size saucepan/pot, wooden spoon, knife, cutting board, measuring cup and spoon, medium size mixing bowl, a square 20x20cm (8x8in.) baking dish with deep sides.

Instructions to Make Gluten Free Peach Cobbler

Step One

Saucepan with diced peaches and coconut sugar ready to cook

In a medium size pot combine the peeled and diced peach pieces along with 3/4 Cup of sugar.

Step Two

Peach pieces mixed with coconut sugar in a pot with a wooden spoon.

Over a medium heat cook the peach and sugar mixture. Stir often until the sugar dissolves, the juice is thick, and the fruit is soft but not mushy. Approx. 10 minutes. Start on next steps while cooking. Remove from heat when ready.

Step Three

Gluten free flour, coconut sugar, salt and baking powder in a bowl ready to be mixed together.

In a medium size mixing bowl measure out the remaining 1/4 Cup of sugar, 1 Cup of GF flour, 1 teaspoon of salt, and 1 teaspoon of GF baking powder. Have oven preheating to 180 C (350 F).

Step Four

Mix all dry ingredients together well.

Step Five

Milk added to dry baking ingredients in a mixing bowl with spatula.

Add 3/4 Cup of whole milk to the dry ingredients.

Step Six

Stir gently with a spatula or wooden spoon until dough is smooth.

Step Seven

Cube the butter into medium size chunks and place in the 20 x 20 cm (8 x 8 in.) oven proof baking dish. Place in the center of the preheated oven until the butter is melted – approx. 3 – 5 minutes, then remove from oven.

Step Eight

Once the butter has melted spread the dough batter over the melted butter in the baking dish.

Step Nine

Spoon the peaches and juice over the batter. Optional – sprinkle with cinnamon if desired. Place in the center of the hot oven and bake until a tester inserted in the middle comes out clean – approx. 35 minutes.
